            Vermicelli Salad with Peanut Sauce - Clearspring

We have created this simple and delicious recipe using Clearspring’s new Organic Vermicelli Noodles. The authentic Thai noodles are mixed in a rich and creamy peanut sauce. This refreshing noodle salad is perfect for a packed lunch or enjoyed at home as a main or side salad. You can also use the peanut sauce as a base or dip for a variety of other dishes.

Serves: 2 - Cooking time: 10 minutes


Peanut Sauce


    1. Cook or soak the noodles according to instructions on pack, rinse under running water and leave in a sieve.
    2. Add all the ingredients for the peanut sauce in a bowl or a jar and mix until there are no lumps. Add a splash of water if you’d like to change the consistency.
    3. Wash and chop all the vegetables into thin strips.
    4. Mix the noodles, chopped vegetables and the peanut sauce together in a large bowl.
    5. Serve with a sprinkle of Clearspring Organic Gomashio - Black or Whole Sesame Seeds.
