            Pad Thai Noodles with Silken Tofu - Clearspring

This classic Thai dish is now easier than ever to create with Clearspring’s new Organic Vegan Pad Thai Sauce. It’s packed full of flavour and perfectly captures the essence of a good Pad Thai with beautiful savoury, tangy and sweet notes without adding any refined sugar. The brown rice noodles are also a great addition to getting more wholesome food into your diet.

Serves: 2 - Cooking time: 15 minutes

Ingredients

Vegetables
  • Handful of fresh bean sprouts
  • Small bunch of tenderstem broccoli
  • 1 red bell pepper - sliced
  • 1 spring onion
  • 1 garlic clove - sliced or minced
Garnish 

      Method

      1. Cook or soak the brown rice noodles according to instructions on the pack, rinse under running water to prevent the noodles from sticking together and set aside.
      2. Wash and cut all the vegetables into bit size pieces.
      3. Heat a wok or frying pan on medium heat with sesame oil. Fry the vegetables until cooked, then mix in the cooked noodles thoroughly.
      4. Open the pack of tofu, drain the liquid and break it straight into the pan. Mix everything in the pan and let everything heat up.
      5. Season with Clearspring Organic Pad Thai Sauce.
      6. To serve, chop or crush the cashew nuts into smaller pieces and sprinkle on top. Garnish with a wedge of lime and fresh coriander. Enjoy warm.
