This classic Thai dish is now easier than ever to create with Clearspring’s new Organic Vegan Pad Thai Sauce. It’s packed full of flavour and perfectly captures the essence of a good Pad Thai with beautiful savoury, tangy and sweet notes without adding any refined sugar. The brown rice noodles are also a great addition to getting more wholesome food into your diet.

Ingredients
Vegetables
- Handful of fresh bean sprouts
- Small bunch of tenderstem broccoli
- 1 red bell pepper - sliced
- 1 spring onion
- 1 garlic clove - sliced or minced
Garnish
Method
- Cook or soak the brown rice noodles according to instructions on the pack, rinse under running water to prevent the noodles from sticking together and set aside.
- Wash and cut all the vegetables into bit size pieces.
- Heat a wok or frying pan on medium heat with sesame oil. Fry the vegetables until cooked, then mix in the cooked noodles thoroughly.
- Open the pack of tofu, drain the liquid and break it straight into the pan. Mix everything in the pan and let everything heat up.
- Season with Clearspring Organic Pad Thai Sauce.
- To serve, chop or crush the cashew nuts into smaller pieces and sprinkle on top. Garnish with a wedge of lime and fresh coriander. Enjoy warm.
