Toshikoshi Soba - 年越し蕎麦

Cross over into the New Year with this Japanese tradition of eating a piping hot bowl of soba noodles. This simple Japanese dish will wash away the hardships of the past year and welcome in the new year ahead!

Method

  • Cook your soba noodles, then rinse in cold water to remove the starch and prevent it from cooking further.
  • You can enjoy plain with just Noodle Broth, or top with tempura, finely cut Nori seaweed, sesame seeds and spring onions.
  • Clearspring Tsuyu is very concentrated, so remember to dilute with hot or cold water.
