Apple Cider Vinegar - ACV Turmeric Dipping sauce

The perfect balance of sweet and sour sauce, with the added Tamari soya sauce brings out the umami flavour to your dishes. You can also use this sauce to marinate vegetables, jackfruit or create quick pickles.

Apple Cider Vinegar - Warming Matcha ACV

Our Matcha ACV is made using our premium grade matcha powder from Japan. Mixing the Italian vinegar with Japanese Matcha creates a perfect harmony to use this as cordial. Perfect diluted with warm or cold water or mixed with a warm apple juice like in this recipe.

Fresh and fruity, our Peach ACV has a unique taste for that perfect glass of fizz. Use it like cordial, the less you use the weaker the taste. We recommend around 1tbsp to a glass.

Amazake is a well known warm drink in Japan. Here we have used our amazake to make a vegan french toast. Simply soak the amazake into to some bread and you will have a delicious jucy piece of toast for that comfort weekend breakfast.

Fatteh - Baked Aubergine with Roasted Chickpeas, Flatbread & Garlic Sauce

This is my take on Fatteh.....baked aubergine, roasted chickpeas, gluten free pitta , garlic lemon tahini yoghurt, cumin, parsley and sumac. I worked with a Palestinian client for four years, learning his family recipes and introducing him to my recipes. This is one (of many) I learnt during that time. I changed it a little by roasting the chickpeas in a little extra virgin olive oil and salt. They take on a lovely golden colour and become slightly crunchy. Get all of your ingredients ready in bowls around your plate and then stack it up!

Baked Apples in Salted Sweet White Miso Caramel

Simple baking with this easy dessert recipe. By adding a hint of Miso brings out the sweetness and the umami flavour hiding in the coconut milk and the fresh apples. If you like your apples al dente, then take them out after 20min but if you want the soft mushy apples, leave it in the oven for an extra 10min. Although its best served hot, you can enjoy this dessert cold as well.

This umami rich dish can be enjoyed as a starter, side dish or a light dinner. It is very common in Japan to eat tofu straight out of the pack. The plain tofu goes perfectly with the miso dressing, use the extra sauce in other asian dishes.

Silken Tofu "Carbonara" with Crispy Aubergine

A rich, creamy vegan spaghetti made using our silken tofu. Tofu is an amazingly versatile product edible straight from the pack, cooked or put in a blender to make a creamy white sauce. Here, we use it to make a classic warming and velvety plant-based carbonara. Keep any leftover sauce for use as a dip or in salad dressings!

We use Agar, the perfect vegan gelatin, to set the dessert. Tweak your panna cotta texture by varying the amount. Vegan Miso Ramen Noodles with Shiitake Mushrooms

Nowadays, ramen noodles are a staple in Japanese cuisine, from a quick lunch to casual dinners. Ramen can be changed in flavour by adding different vegetable toppings so you will never get bored of eating it. You can fry tofu, seitan or tempeh and add it on the top with a spicy sauce. DIY Instant Miso Soup

I love this hot, soothing miso soup as a pick-me up at any time of the day. Simply pop the ingredients in a tea cup, top up with hot water, done! Or, bring them to work portioned up and ready to go – perfect for meal prep. You can vary this recipe indefinitely, just include something a little spicy or acidic to lift the salty miso. I like a few spoons of oats in mine to make it a little more substantial, almost like rice!

No-bake Matcha 'Brownies'

Matcha is one of my favourite foods! I love its flavour and colour as well as its subtly uplifting effect. It tastes amazing in sweets so here I've used it as I would cacao to make indulgent little brownie bites. The oats give creaminess and make the bites lighter, rice malt syrup adds a slight chewiness and miso rounds everything off beautifully. Just as good popped into your bag or lunchbox to keep you going, or with a cup of tea.
