Creamy Tomato & Tofu Penne with Basil
A bowl of comforting penne in a rich tomato sauce, made beautifully creamy with silken tofu. Finished with sweet cherry tomatoes, fresh basil and a drizzle of Clearspring Yaemon Tamari, this simple dish delivers hidden plant protein in every bite. Perfect for busy evenings and enjoyed by the whole family.

Ingredients
- 250g Organic Brown Rice Pasta with Quinoa & Amaranth
- 1 jar/350g organic tomato sauce of your choice
- 1 pack/300g Clearspring Organic Japanese Tofu - Silken & Smooth
- 1 tbsp Clearspring Organic Italian Extra Virgin Olive Oil
- 8 to 10 cherry tomatoes, halved
- a handful of fresh basil leaves
- 1 to 2 tsp Clearspring Organic Japanese Yaemon Tamari Soya Sauce - Double Strength
- Clearspring Traditional Unrefined Sea Salt to taste
- Freshly ground black pepper, to taste
Method
- Bring a large pan of salted water to the boil. Add the penne and cook according to the pack instructions until al dente. Drain and set aside.
- Add the tomato sauce and silken tofu to a blender and blend until completely smooth and creamy.
- Pour the sauce into a saucepan and warm gently over a medium heat for 3 to 4 minutes. Season with sea salt and black pepper to taste.
- Add the drained pasta to the sauce and stir until evenly coated.
- Spoon into bowls and top with halved cherry tomatoes and fresh basil leaves. Finish with a light drizzle of Clearspring Yaemon Tamari, Clearspring extra virgin olive oil and an extra twist of black pepper before serving.
