Creamy Tomato & Tofu Penne with Basil

A bowl of comforting penne in a rich tomato sauce, made beautifully creamy with silken tofu. Finished with sweet cherry tomatoes, fresh basil and a drizzle of Clearspring Yaemon Tamari, this simple dish is rich in plant protein and full of savoury flavour.

Ingredients

  • 250g Clearspring Brown Rice Pasta with Quinoa & Amaranth
  • 1 jar/350g organic tomato sauce of your choice
  • 1 pack/300g Clearspring Tofu - Silken & Smooth
  • 1 tbsp Clearspring Italian Extra Virgin Olive Oil
  • 8-10 cherry tomatoes, halved
  • a handful of fresh basil leaves
  • 1 to 2 tsp Clearspring Yaemon Tamari Soya Sauce - Double Strength
  • Clearspring Traditional Unrefined Sea Salt to taste
  • Freshly ground black pepper, to taste

Directions

  1. Bring a large pan of salted water to the boil. Add the penne and cook according to the pack instructions until al dente. Drain and set aside.
  2. Add the tomato sauce and silken tofu to a blender and blend until completely smooth and creamy.
  3. Pour the sauce into a saucepan and warm gently over a medium heat for 3 to 4 minutes. Season with sea salt and black pepper to taste.
  4. Add the drained pasta to the sauce and stir until evenly coated. 
  5. Spoon into bowls and top with halved cherry tomatoes and fresh basil leaves. Finish with a light drizzle of Clearspring Yaemon Tamari, Clearspring extra virgin olive oil and an extra twist of black pepper before serving.
