Yaki udon is a quick and easy stir-fry, using udon noodles, a mix of vegetables and seasoned with soya sauce. You can swap the vegetables in this recipe to make your very own yaki udon. And if you’re short on time, you can season it using Clearspring Teriyaki Sauce instead!

  1. Cook the udon noodles as instructed on the pack, drain, rinse and set aside.

  2. Mix all the ingredients for the sauce in a bowl.

  3. Cut the onion into slices or chunks, the carrot into matchsticks, and the cabbage into bite-sized pieces.

  4. In a large frying pan, heat the sesame oil and start by frying the onions, followed by carrots and cabbage. Once everything looks cooked, add the sauce and let that cook for 1-2 minutes. Add the cooked noodles and mix everything until the noodles are coated in the sauce and vegetables.

  5. Serve straight from the pan and top with green nori sprinkle, pickled sushi ginger and a sprinkle of shichimi for extra umami and spice.
