Mirin from Mikawa region (old name for current Aichi prefecture, Japan) is considered to be the finest in Japan. It is produced by a traditional method of koji fermentation and careful ageing over nine months. Sweet rice is used instead of the cheaper starches found in the other products in the market. Mirin is used to sweeten and gives a depth of flavour.

Exquisite flavour, not that corn syrup crap sold elsewhere. Highly recommended. I like how the bottle is made to let a drip at a time to control dispensing. Perfect.
Love this product, I can basically add in anything from stir -fry dishes to soups. Few dashes but taste so good!
… the lightest mirin, flavourful and delicious. It makes for the perfect condiment for a lotus root, shiitake and green onion stir fry. I’ve also used it with other Japanese ingredients and this particular one seems to fit the balance best. Shipping was prompt with secure packaging, will be ordering many more products from Clearspring in the near future.
