Our Producer

Creating the perfect, great tasting noodles takes real expertise, especially when made without the use of processing aids, as many conventional noodles are. Our Organic Udon Noodles are made by a third-generation family producer in Japan’s Gunma prefecture, where they have been producing noodles for over 70 years. They have struck the perfect balance of old and new, combining a deep respect for traditional craftsmanship with state-of-the-art production facilities.

The Difference Between Noodles & Pasta

Noodles in Asia and pasta in Europe may look similar, yet they differ in many ways. For example, Japanese noodles often use softer wheat, while pasta is typically made from the harder durum variety grown in the Mediterranean.

Frequently Asked Questions

Why is the salt content so high?

Salt is a traditional part of making udon - it helps create the chewy texture and acts as a natural preservative, so no artificial additives are needed. While the pack shows the salt level in the dry noodles, after cooking most of it stays in the water, leaving just 0.22% in the noodles you eat.

How does salt content compare to pasta?

Regular pasta often ends up with more salt because it’s boiled in salted water. Our udon actually contains less after cooking.
