Our high quality unpasteurised fermented brown rice miso is carefully made to an old family recipe and traditionally aged. 1 tsp of miso seasons about 1 cup of liquid. Dissolve in a little water then add towards the end of cooking.

Miso is a live product and ongoing fermentation may cause the lid to bulge. It will still be safe to consume. Harmless white yeasts may develop from exposure to air. Simply skim off.

How to Use

Miso is a very versatile seasoning and can be used to flavour soups, stews and bean dishes. Also delicious for gravies, dips, spreads and pickles. It makes wonderful dressing for salads, noodles, grains & beans, tofu, vegetable protein and grilled dishes.

Our third-generation artisan family miso producer has been perfecting miso production since 1928, in Japan’s Nagano prefecture, where the surrounding mountains, climatic conditions, low humidity, clean air and fresh water make the perfect conditions to aid the natural ageing and fermentation process. Making traditional and authentic miso is a real art form and takes years of experience to master.

Why is this miso not gluten-free if it's made from brown rice?

Our Brown Rice Miso is not certified gluten free. So although it does not contain any gluten in the ingredients, it may contain traces from cross contamination.

How long can Brown Rice Miso be stored once opened?

Once opened, refrigerate and consume before the best before date.

At what temperature are the probiotics harmed?

The simplest way to avoid killing the probiotics completely, is to avoid bringing to the boil once the miso has been added. How hot you go however, is down to personal preference and a balance between not harming the probiotics, vs having a nice hot soup.
