Miso will naturally darken with time; this will not affect quality. Miso is a live product and ongoing fermentation may cause the lid to bulge. It will still be safe to consume. Harmless white yeasts may develop from exposure to air. Simply skim off.

This white miso is wonderful , I much prefer it to veg. cubes . I use it for making soups and a quick “ pick me up “ highly recommend it and not too salty . perfect !

Using it in a simple sushi is one of the most straightforward ways and so easy! I add a spoonful of that to my soups and the tomato sauce is so good with a tablespoon of a buckwheat miso too!
