Ume Su is a traditional Japanese seasoning, reported to date back to the Edo Period in the 1600s. It is growing in popularity around the world for its very unique flavour profile. Its vinegar-like tanginess adds a rich flavour to a wide variety of dishes including salads, dips, vegetables, dressings, for pickling and even as a secret ingredient in cocktails.

I really enjoy the combination of salt and sour in ume su. It is great for pickling and also can be used in combination with some oil (I like to use Clearspring toasted sesame oil)
and freshly chopped herbs and maybe a little spicy flavour as well to mix with raw or steamed veggies, pastas, cous cous or other grains. I love to slice radishes finely and leave in a 50/50 water and ume su mixture for a little while - delicious and fresh!
