Raspberry Chocolate Mousse using Tofu - Clearspring

Indulge in our quick and beautifully simple plant-based Chocolate Mousse recipe, made with Clearspring award-winning Organic Japanese Silken Tofu. This high-protein mousse is perfect for dessert or as a sweet treat. Top with your favourite fruit or berries.

Serves 1-2 I Prep time: 10 mins + 1hr in the fridge

Ingredients

  • 1 pack/200g Clearspring Organic Silken Tofu
  • ½ tsp Clearspring Sweet White Miso
  • 70g dark chocolate (vegan)
  • 2-3 tbsp maple syrup
  • any fresh fruit - we used raspberries
  • grated chocolate

    Method

    1. Place a large bowl on top of a saucepan with some water in it. Bring the water to a boil so it heats up the bowl, turn the heat to low and leave it to simmer. 
    2. Break the chocolate into small pieces and place it into the bowl, mix with a spatula until it's melted. 
    3. Open the pack of Tofu and drain the liquid.
    4. Place the tofu in a blender with the melted chocolate, maple syrup and miso paste and blend until smooth. 
    5. Place in a large container or into individual serving bowls and place in the fridge for 1 hour or more. 
    6. To serve, add fresh raspberries and shaved chocolate.
