Peanut Butter Chocolate Mousse

Fancy a high protein dessert with a nutty flavour? Here's a delicious peanut butter mousse made using silken Tofu. A creamy mousse with that riche peanut butter taste. You can enjoy it on its own, or add a layer of melted chocolate, or create a creamy ganache. Prepare it in advance and pop it in the fridge so you can serve it as a dinner party dessert or enjoy as a weekend treat.
Serves 1-2 I Prep time 10 minutes + 1hr in the fridge
Ingredients
- 1 pack/200g or 300g Clearspring Organic Silken Tofu

60g/3-4 tbsp Clearspring Peanut Butter
- 2-3 tbsp maple syrup
Ganache
- 20-40g dark chocolate - melted
- 50ml plant milk or coconut milk or coconut cream
- Grated chocolate for decoration
- Sea Salt
Method
- Open the pack of Tofu and drain the liquid.
- Place the tofu in a blender with the peanut butter and maple syrup. Blend until smooth.
- Place in a large container or into individual serving bowls.
- To melt the chocolate - Place a large bowl on top of a saucepan with some water in it. Bring the water to a boil so it heats up the bowl, turn the heat to low and leave it to simmer. Break the chocolate into small pieces and place it into the bowl with plant milk, wait until the chocolate has melted and mix with metal whisk.
- pour the ganache on top of the peanut butter mousse and place in the fridge for 1 hour or more.
- To serve, add shaved chocolate and a pinch of sea salt.
