Here's a great alternative way to enjoy your favourite Antipasti ingredients. The addition of Silken Tofu balances the vibrant flavours from the Antipasti.
- ½ Organic Courgette
- ½ Organic Carrot
- 1 small chunk of Ginger
- Fry finely chopped ginger, carrot, and courgettes whilst boiling the pasta, and sprinkle the mixed herbs when all the vegetables have softened.
- Put a pack of Clearspring Tofu in a strainer to drain excess water, then make Tofu into a paste.
- Once the pasta is cooked, dress with Italian extra virgin oil, sea salt, basil pesto, olives, artichokes, sundried tomatoes, and Tofu paste at the end. Mix well.
- Serve pasta on the bed of green lettuce leaves, and sprinkle finely chopped vegetables on top of pasta.
