Whole Wheat Spaghetti with Tofu Antipasti

Here's a great alternative way to enjoy your favourite Antipasti ingredients. The addition of Silken Tofu balances the vibrant flavours from the Antipasti.

Serves 2

Ingredients

Finely chopped:
  • ½ Organic Courgette
  • ½ Organic Carrot
  • 1 small chunk of Ginger

Method

  1. Fry finely chopped ginger, carrot, and courgettes whilst boiling the pasta, and sprinkle the mixed herbs when all the vegetables have softened.
  2. Put a pack of Clearspring Tofu in a strainer to drain excess water, then make Tofu into a paste.
  3. Once the pasta is cooked, dress with Italian extra virgin oil, sea salt, basil pesto, olives, artichokes, sundried tomatoes, and Tofu paste at the end. Mix well.
  4. Serve pasta on the bed of green lettuce leaves, and sprinkle finely chopped vegetables on top of pasta.
