Tahini Tantanmen Ramen with Crispy Soya Mince

This ramen will ruin all other ramen for you 🍜 Creamy tahini broth, crispy soya mince, chilli oil and chewy noodles. Built from a Clearspring Shoyu Ramen kit and ready in under 20 minutes.

Method

  1. Soak the soya mince in hot water for 10mins. Drain then rinse under running water and squeeze out the liquid and leave to one side. 
  2. Heat sesame oil in a frying pan over medium heat. Add grated ginger and garlic and the soya mince. Cook until golden and crispy, season with tamari and set a side. In the same frying pan, add a little sesame oil and fry the pak choi until golden.
  3. In a saucepan, add all the ingredients for the sauce, including the 2 soup sachets. bring to a medium heat and keep stirring until the tahini and everything else has mixed well. turn off the heat before boiling. 
  4. Cook the noodles to packs instructions. Drain well and divide it into two bowls.
  5. Place the toppings, soya mince, greens spring onion and coriander and pour the soup from the side of the bowl. Add the Nori Seaveg Crispies on the side and slurp away.
