Hojicha Mousse With Crushed Hazelnuts

Meet Matcha’s roasted cousin, Hojicha, in an indulgent twist on the classic dark chocolate mousse. Freshly whisked Hojicha is combined with melted white chocolate to create a dessert that couldn't be easier to make. With its smooth, nutty flavour and gentle smoky aroma, Hojicha makes for an elegant dessert that’s surprisingly simple to prepare - yet impressive enough for a dinner party dessert.

Method

  1. To melt the chocolate - Place a large bowl on top of a saucepan with some water in it. Bring the water to a boil so it heats up the bowl, turn the heat to low and leave it to simmer. Break the white chocolate into small pieces and place it into the bowl, mix with a spatula until it's melted and creamy.
  2. Open the pack of Tofu and drain the liquid.
  3. Whisk the Hojicha with warm water to create a lump-free thick paste.
  4. Place the tofu in a blender with the melted chocolate and Hojicha paste. Blend until smooth.
  5. Place in a large container or into individual serving bowls and place in the fridge for 1 hour or more.
  6. To serve, add roasted hazelnuts and a drizzle of cold-pressed extra virgin olive oil. and dust Hojicha powder.
