It is produced in Kyusyu, Japan's Southern island, using a traditional method of ageing in partly buired earthware crocks. Brown rice vinegar [3] produced in this region is considered to be one of the finest qualities in Japan. Refreshing and delicious, it is full-bodied and slightly sweet without the harsh acidity often found in the other brands.
