Clearspring Organic [1] Sweet White Miso [2] is a short-aged Kyoto style miso witih a wonderful creamy richness, and a delicate and slightly salty sweetness.
It is ideal for seasoning light soups, and makes a good substitute for dairy ingredients in dips, dressings, sauces and spreads. Try using a little in mashed potato instead of milk, or in creamy soups instead of dairy cream.
Sweet white miso is made in small batches to maintain its special quality. Its light colour may darken over time due to natural oxidisation, but this should not alter its flavour.
