It is such a joy to see the blossoms of spring and the trees showing new life. Nature is so abundant and forgiving, especially when we show respect. Now is the time to enjoy the fresh greens of spring, and this month we give you three recipes ideal for eating al fresco, and some great tips for picnicking in style. Please take a look at our new seasonal vegetable feature, where we will introduce some little known facts about a different vegetable each month and suggest refreshing new ideas for your menu, beginning this month with the humble cauliflower. Great New Packaging

Clearspring Chairman Chosen As Panellist At the Japanese Restaurant International Forum
Recognised internationally as a pioneer in the promotion of Japanese food, and holding the 2007 Award for Overseas Promotion of Japanese Food bestowed by the Ministry of Agriculture, Forestry and Fisheries of Japan for his distinguished contribution in the area, Clearspring Chairman Christopher Dawson was issued a special invitation to participate as a panellist at the Japanese Restaurant International Forum which took place on the 27 and 28 March in Tokyo's New Otani Hotel. This event was held by the Organization to Promote Japanese Restaurants Abroad (JRO), a non-profit organisation whose aim is to encourage the spread of Japanese restaurants and ingredients around the globe. The International Forum was attended by top chefs and trade people from all round the world and a chance for all those with an interest in Japanese food to congregate and enjoy a variety of lively panel discussions and slide presentations about the current state and future of Japanese food abroad.
Clearspring at the Natural and Organic Products Europe Show
The Clearspring team had a great time at this trade fair, which took place on the 13th and 14th April at Olympia in London. Packed with stalls showcasing all sorts of products, the event was a fantastic opportunity to meet and liaise with all those dedicated to the production of organic and natural food, clothing and cosmetics. Positioned right in the heart of the venue and some samples of our favourite products on display, Clearspring enjoyed a huge amount of interest in our stall, where the entire range was showcased. This time the show had a fantastic Organic Kitchen stage, with top chefs, including Antony Worrall Thompson, using Clearspring Organic Tamari, Extra Virgin Olive Oil and Traditional Sea Salt [3]. Thanks to all of you who popped along to see us, helping to make it a really great event.
Wasabi - Taste The Real Deal
Wasabi, a type of Japanese horseradish, is an indispensable sushi ingredient with an unforgettable taste, nutritional benefits and quite remarkable antibacterial properties, which has gained enormous popularity all around the globe. Seasonal Vegetable of the Month: Cauliflower
The cauliflower is not generally thought of as a quintessential spring vegetable, but it is in fact at its best in May. A type of brassica, along with leafy greens such as cabbage, kale and broccoli, its name actually originates from 'cole flower', with 'cole' and 'kale' being variations of the same word. Low in fat, high in fibre and vitamin C, cauliflower is great raw in salads or added to hotpot dishes. Read more [2] [5].
