Tekka [1] is an iron-rich, moist yet powdery condiment that’s delicious sprinkled on grains, noodles, and vegetables.
Clearspring Tekka, also know as miso [2] condiment, is made by sautéing chopped burdock [3] root, carrot, and lotus root [4] in unrefined sesame [5] oil, then adding Hatcho (soya bean) miso and cooking the mixture over a low heat for five to seven hours until crumbly and quite dry. Chopped ginger [6] is added towards the end of cooking.
Tekka should be used sparingly, since it’s concentrated and strong.
