Clean and elegant tasting Shizengo sake [1] is winter-brewed by Oki Daikichi Honten, a 140 year old sake brewery in Fukushima-ken, north east Japan, using only freshly harvested locally grown rice and spring water.
After the fermentation is complete the sake is left to mature for a further six months to develop its characteristic flavour.
