Welcome to the June newsletter, the "Rose month". Here's hoping for some good weather during this June, the month with the longest daylight hours of the year.
Many of you will have learnt that here in the UK we throw away £10 billion worth of food every year and in Japan, more than a quarter of the food is wasted. So I often wonder about all this big talk about the necessity to genetically modify the crops in order to feed us all. Isn’t it time that we learnt to respect food as a wonderful gift from nature, as our earlier generations did?
My first and foremost vision is for the Clearspring brand to stand for top quality foods and to encourage people to rediscover and respect the true value of good food. After all, the old adages of ‘breaking bread’ and having a meal together meant so much to our forefathers. Clearspring at the Slowfood Market
On the first bank holiday weekend of May, Clearspring was invited to participate in a Slowfood Market held on the sunny Southbank of the Thames. Slowfood is an international organization dedicated to promoting real products lovingly crafted to traditional recipes. Our stall offered Clearspring Organic favourites including Miso Soup and Rice Crackers, as well as some exciting and authentic products such as Umeboshi and Oat Amazake. The tasting of Organic Tamari and Italian Extra Virgin Olive Oil proved very popular, and it was great to meet other people that share our passion for natural, delicious food.
Clearspring Mikawa Mirin
Like all our foods, Clearspring sweet rice mirin is an artisan-made product of superlative quality. Clearspring’s mirin supplier, the Sumiya family, are from the region formerly known as Mikawa renowned for its top quality traditional mirin production, and have been producing their mirin to the same recipe for nearly one hundred years. The elegant asparagus is one of England’s most prided vegetables, but it is only at its prime for a short while, so you should make the most of this splendid vegetable while you can buy it fresh tender spears at the market.
