Seasonal Product Feature - Organic Shiitake

Autumn is the time for foraging, truffles and fungi and so it is very appropriate that we will be launching our new Organic dried Shiitake Mushrooms this month.

Shiitake mushrooms (shii – oak tree, take – mushroom) have been gathered and eaten since pre-historic times and are highly prized in the East for their therapeutic value. They have long been recognised as medicinal mushrooms along with other oriental varieties such as Maitake and Reishi. Their health benefits include immune support, lowering cholesterol, cardiovascular support and helping the body fight against tumours. Much of the research to confirm these properties is done on mushroom extracts in laboratory environments, however there are preliminary results based on human diets that suggests we can still take advantage of some of these benefits just by eating whole oriental mushrooms.

Shiitake are also known to be a good source of non-animal iron as well as protein, dietary fibre and vitamins C and B. Mushrooms growing in the soil tend to soak up unwanted chemicals like sponges but since our new Shiitake mushrooms are organic you do not have to worry about pesticides or herbicides.

As far as flavour is concerned our Organic Shiitake have a deep savoury umami taste that adds gourmet flair to almost any dish and is one of the East’s most exotic and delicious foods. Can be used in soups, graies, stocks or sushi, see our website for recipe ideas.

Tofu Recipe Competition

We are running this recipe competition to show that our long-life nigari Organic Tofu is a very versatile product which can even be eaten straight out of the pack or used in both savoury dishes as well as sweet desserts. As a result we have created 3 recipe categories: Dipping sauces, Savoury and finally Sweet / dessert recipes.

You can submit recipes for any category but please clearly indicate which category you are submitting the recipe for. The very creative may want to submit an entry for every category! We will award a Clearspring Goodies prize for the best recipe in each category, and include them on our website with your profile! Please email all entries to info@clearspring .co.uk. Competition closing date Friday 21st October and the winners will be announced in our November newsletter.
