Clearspring Tamaki Sake now available at Zuma Restaurant
One of London’s most popular and authentic Japanese restaurants and sake bars is proud to offer Clearspring’s Tamaki sake to its discerning clientele.
Premium rice sake is being increasingly enjoyed and appreciated in the UK, and this is in part due to the work of restaurants such as Zuma in London’s Knightsbridge, which employs a full time sake sommelier to seek out the best pure rice sakes available from around Japan.
Clearspring’s Tamaki Sake is new to the marketplace, and Zuma’s sommelier, Sayaka Watanabe, has personally chosen to offer it at the restaurant. Both the rice and the producer of Tamaki sake are certified by JAS, the national certification body for organic products in Japan, and this is what attracted her to the drink. “It was the first time I had actually tasted an organic sake,” she says. “I loved the idea, so I decided straight away to take it on stock.”
Watanabe is extremely enthusiastic about the drink, in particular the quality of the rice used. “It's sometimes quite difficult to explain how much rice means to us Japanese,” she says. “Rice is sacred, it's a luxury, a Japanese heart, and that makes sake almost like a piece of heaven. By accentuating the care they put into rice, it's a sake that can show how much rice means.”
She also points out that Tamaki is a “full-bodied sake with a warm chestnut and honey like nose, followed by a rich flavour of toasted grains,” which can be enjoyed either warmed, at room temperature or chilled, and is an ideal accompaniment to a wide variety of foods including fish such as grilled salmon, meat such as sirloin steak and vegetable stews.
