Wara Noen's organic shiitake mushrooms are grown deep in the mountains of the Gifu prefecture between the Mino and the Hida mountain ranges. Mushroom production requires clean supplies of air and water which this area has in abundance. To bring out their flavour and maximise the nutritional value, they are grown on shiitake beds made from pure sawdust powder and organic rice bran. This region also benefits from distinct seasons from warm summers to cold snowy winters which give rise to fleshy mushrooms. They are the first shiitake mushrooms to receive organic certification in Japan.
