- Wakame
- The sea vegetable Undaria pinnatifida, a mild tasting yet delicious addition to many dishes, most famously miso soup. Sold dried, it should be soaked for a few minutes prior to use. An instant version that can be added directly to soups and stir-fries is also available.
- Wasabi
- Traditionally made from a type of horseradish (Wasabia japonica), but nowadays often from regular horseradish dyed green, this piquant paste is an essential accompaniment to sushi.
