- Millet
- A grain cultivated widely around the world as food and fodder, millet is gluten free and rich in certain vitamins. It is used to make one variety of Clearspring’s amazake.
- Mirin
- One of Japan’s most important cooking ingredients, made from glutinous rice that is steamed and mixed with koji and shochu. This sweet, syrupy condiment adds taste and lustre to many dishes.
- Miso
- A paste of fermented soya beans and rice or barley that is essential in Japanese cooking. Extremely healthy and versatile, it adds a satisfying savoury flavour to soups, stews, grilled and braised dishes.
- Mochi
- This sticky paste made from sweet, glutinous rice (Oryza sativa) is a popular confectionery item in Japan, though it can also be included in savoury dishes such as soups and stews.
