- Ginger
- Although fresh ginger is also used in Japanese cuisine, it is most commonly found pickled in rice vinegar and dyed red with shiso (perilla) leaves to create what is known as gari or sushi ginger.
- Gluten
- Gluten is a compound of the proteins gliadin and glutenin, which is found alongside starch in some grains, such as wheat, barley and rye. Although much of the world’s diet is composed of these grains, some individuals, known as coeliacs, are gluten-intolerant. - Gomashio
- Sesame with sea salt. This tasty condiment consists of sesame seeds mixed with a small amount (around 5%) of sea salt, and adds a delicious flavour to a wide range of dishes.
- Grain Coffee
- A caffeine-free alternative to regular coffee, made from a variety of roasted and crushed grains, nuts and seeds including rice, wheat, chicory, azuki beans, hazelnuts and many others.
- Green Nori Flakes
- Known in Japanese as aonori, this popular condiment is made from the sea vegetable Enteromorpha. It can be sprinkled onto many different dishes, adding colour and flavour.
