Tekka

Tekka is an iron-rich, moist yet powdery condiment that’s delicious sprinkled on grains, noodles, and vegetables.

Clearspring Tekka, also know as miso condiment, is made by sautéing chopped burdock root, carrot, and lotus root in unrefined sesame oil, then adding Hatcho (soya bean) miso and cooking the mixture over a low heat for five to seven hours until crumbly and quite dry. Chopped ginger is added towards the end of cooking.

Tekka should be used sparingly, since it’s concentrated and strong.
