Umami is ‘the flavour’ of the month, now highlighted in the press as the fifth taste. It has been known in Japan for one hundred years.

Confucius said ‘Everyone eats and drinks, but only few appreciate the taste of food.’

At last, after many decades of accepting mass produced foods as standard, now people are asking for more. They want new flavours, real flavours and to know how and where their foods are made.

I believe many people are asking - ‘Can we please have foods made with ingredients from organically grown, non-GM and non hybrid seeds?’. After all, what is the future of humanity, if the seeds used to grow our food cannot naturally reproduce themselves.

My ongoing commitment at Clearspring is to offer authentic, flavourful and health-giving foods, made with organically grown ingredients and personalized with an artisan behind each product.

Umami, naturally tasty

Recently umami - the fifth taste - has been back in the headlines. Similar to savouriness, umami is found in abundance in products such as miso, soya sauce, sea vegetables and dried mushrooms. It could also be the key to naturally enhancing the taste of your food. Next time you make salad dressing try adding a splash of Clearspring Organic Tamari instead of salt and see if you find it tastier, and when you’re cooking stews and soups add a strip of Clearspring Kombu for a little extra depth. At Clearspring we like to visit our stockists regularly to find out how they are and get a little feedback. Last month we visited Whole Foods Market in Kensington, London and it sounds like there’s a lot of sushi making going on.
